Nor will the average Aussie agree that stewed sheep's eyes as an entree are pure bliss.

But 9 out of 10 will unanimously concur that a steak and kidney pie with buttered mashed potatoes and peas is good for the soul. Roast leg of lamb, or a wing rib with baked pumpkin and gravy made from the pan juices, is comforting on a winter's evening.

Our foods, as well as our appreciation for them, is as sophisticated as any in the world. And our interest in what we eat has become a national hobby. Which is why I have put together this encyclopedia of food.
